First, it is better to know the reasons why summer multiply the risk of food poisoning, so as to prevent them if possible.

The main causes of the poisoning cases in the summer months are mainly two:
1. The improper storage of food: Due to the hot foods should be refrigerated and consumed within a short time in order to avoid contamination. Even the kitchen hygiene plays a very important role, since the bacteria in the heat to multiply.
2. The proliferation of bacteria in the water (such as Salmonella and Escherichia coli), responsible for intestinal intoxication.

Other conditions that favor the growth of germs and bacteria are:
1. Moisture necessary for bacteria to survive and multiply
2. Abundance of nutrients, especially protein
3. The time between the preparation of the food to its consumption

How to avoid food poisoning?
Some practical tips for handling food with maximum safety even when external conditions are conducive to contamination, such as in the summer.
It is advisable to wash the cooking utensils in the dishwasher, as it allows you to reach for the higher temperatures required to disinfect and sterilize.
After each use, wash and rinse well in the towel, as well as change frequently. The wet sponge is in fact the ideal environment for the proliferation of bacteria.
Avoid contact with other raw food already cooked to prevent contamination.

What are the most common food poisoning?
The most common poisoning are those caused by the bacteria Salmonella and Escherichia coli. These bacteria are normally found in raw foods of animal origin that have not been properly treated.
Are also common contaminants such as Staphylococcus, present in the nose and throat.
Instead botulism is transmitted through food stored, often in a home without respecting the time and method of sterilization.
Listeriosis is particularly severe if you are expecting a baby, which is found in raw milk, fresh cheeses made from raw milk, vegetables.

Usually the first symptoms of poisoning appear between half an hour and two hours after the consumption of food contaminated. The most common are:

  • nausea
  • stomach ache
  • fever (in some cases)
  • diarrhea

In case of acute diarrhea in children, the greatest risk is that the small drying out, so it is very important to replace fluids lost in a continued throughout the period of the duration of the symptom. Similarly if you are pregnant you must be careful not to become dehydrated, especially during the summer months, if you are a victim of poisoning so worried for fluid replacement with water (not cold) and possibly some specific supplement.
